As many folks here on DA are aware, my sweetie *LadyAliceofOz has been on a gluten free diet. The thing she misses most obviously is breads and cakes. So I've been experimenting with various products.
Now, understand, this is NOT intended to be "dairy free". Gluten free means no wheat, barley, rye, and depending on the person, oats, and spelt. Of course there are other grains that has gluten and those folks who need to adhere to a gluten free diet know which ones they are...
When you hit download, you will be presented with a PDF file of a 5"X7" recipe card that you can print and save.

Serve this with butter and honey, and a hot bowl of chili or your favorite soup, and it doesn't get much better!

Sounds interesting...but kinda complicated. Have you ever tried mamaliga?

Not really complicated at all. Actually, mamaliga, is what we call "Corn Meal Mush".

Corn Bread is not even close, this is a cake. The only real difference from baking Corn Bread the usual way and the way I'm doing it here is that I'm whipping the egg whites like what you would make meringue, (obviously without the sugar ;-) )
Honestly, is one is not Gluten Intolerant, it's easier and a bunch cheaper to by "Jiffy Corn Bread Mix" which is about 75 cents a box, you add water and one egg mix it up and slap it in a pan and stick it in the oven, and cook it for about 20 minutes... BUT unfortunately, Alice can't have the regular wheat.

In truth, making corn meal mush is much more difficult... It's a bunch easier just to buy it at the store... :shrug:

:hmm: Have you tried einkorn wheat? I found out about it when I started giving Ileana solids, but couldn't find it here at the time, but from what I recall it should be safe in a gluten-free diet as well :shrug:

I just finished up some further research on Einkorn Wheat, it does have gluten, although it seems that some people with mild gluten intolerance can handle it. This is similar to Spelt flour, which is low in gluten, but not gluten free...

:shrug: As I remember it has gluten but a different chemical formula or something :hmm: Anyway, better to be safe than sorry :hug:

Hadn't heard of that one but have looked it up and will check it out. According to what I found it is Gluten Free. Thanks!
